Mom’s Easy Sausage Egg Casserole
Growing up, I called this recipe my Mom’s sausage, egg and cheese casserole.
I’ve enjoyed this Easy Sausage Egg Casserole every Christmas morning since I was a kid, and now it’s just not Christmas for my family without it!
When Borden® Cheese asked me to create a holiday recipe using their yummy shreds, I knew I should share the story of our family’s holiday traditions.
Every year, we looked forward to my mom’s breakfast casserole on Christmas morning. I don’t remember her making it any other time of the year but that day, which made it extra special.
Now that my mom is gone, this family tradition is even more special to keep going. It’s the perfect heartwarming dish to cook this holiday season. The pure, creamy goodness brings back wonderful family memories and is a sure sign of a fun, delicious holiday spread.
Christmas Breakfast Casserole Family Tradition
I went through a photo album my mom made of our Christmas mornings throughout the years, and sure enough, there was her breakfast casserole!
My Great-Grandma Chunkie was still with us here in 1980 something helping herself to some of Mom’s casserole. Please ignore my crazy perm! LOL
Then in 1990 something, the wood paneling is gone and both my mom and Grandad were still with us. Sure enough, there is the breakfast casserole!
And about this time of looking through old photos one of my favorite songs, Memories by Maroon 5 comes into my head…

Change is hard, but that’s why family traditions are so important!
Our Christmas breakfast casserole tradition brings back my mom, my Granddad and my Great-Grandma Chunkie.
It’s not only a slice of creamy cheese, eggs and sausage, but a slice of home when everyone gathered together at my mom’s house for the holidays.
We didn’t have much, but I’m very thankful to have grown up with lots of laughs and yummy recipes to remember everyone by, like this easy Easy Sausage Egg Casserole.
I’m so happy to share my mom’s recipe that’s been made in my family for over 40 years!
Whether it is baking the casserole together or sitting down to continue the family tradition, this sausage egg bake recipe is the perfect addition to our breakfast table during the holidays.
We shared this recipe in my sorority’s recipe box many years ago. To this day, my college friends still text me on Christmas to let me know they made it.
It’s not anything fancy, but a very special recipe to me. Thanks to Borden® Cheese for being a part of our tradition for so many years!
How to make EASY Sausage and Egg Breakfast Casserole
I hope you enjoy our traditional breakfast casserole! It’s very easy to make ahead of time, place in the refrigerator overnight and bake for a holiday breakfast!
Start by browning sausage in a large skillet. While the sausage is cooking, slice the crust off of 6-7 pieces of white bread. Mom always used white bread and crusts were not allowed!
In a 9×13 greased baking pan, place the bread and spread butter over the bread.
Sprinkle the cooked sausage over the bread.
Now sprinkle Borden® Cheese Shreds over the top of the sausage.
In a large bowl, mix the eggs, half and half and salt. Now pour the egg mixture over the cheese.
Cover and place in refrigerator overnight to bake the next day or bake right away for 40-45 minutes until bubbly.
When the casserole is almost done and I want it to be extra cheesy, I’ll remove from the oven and sprinkle even more cheese over the top, placing the dish back into the oven to continue cooking.

Sausage Egg Casserole Breakfast Recipe
Ingredients
- 6-7 slices white bread
- 1 tablespoon butter
- 1 lb pork sausage
- 1 ½ cups Sharp Cheddar, shredded
- 1 tsp salt
- 6 eggs
- 2 cups half and half
Instructions
- Cook sausage until brown, stir to crumble, drain and set aside.
- Remove crusts from bread and spread with butter
- Place bread in greased 9x13 baking dish. Cut the pieces if needed to fit the entire pan.
- Spoon sausage over bread and sprinkle sausage with 1 cup of cheese.
- In a bowl, beat eggs, half and half and salt together. Pour over cheese.
- Cover and chill overnight.
- Bake uncovered at 350 degrees for 45 minutes or until bubbling.
- Let set out of the oven for 5 minutes before cutting and serving.
